Directions
- Separate the whites from the yolks.
- Add a pinch of salt to the egg whites and beat them with a mixer to stiff foam.
- In the second bowl, mix the egg yolks, milk, flour and sugar.
- Mix beaten egg whites gently with the rest of the mixture.
- Heat the pan over medium heat and melt 1 tablespoon of butter.
- Use a ladle to lay out and spread half of the mixture.
- Cover the pan and fry the omelette for 3-4 minutes. Until it's golden brown on the bottom.
- Gently turn the whole thing on the other side (I recommend using a lid) and fry for up to 30 more seconds.
- Spread yoghurt and jam over the omelets. Then fold in half and sprinkle with icing sugar.
