Directions
- Mix sugar, eggs, honey and mirin in a bowl.
- Add sifted flour and baking powder.
- Mix everything together, cover and put in the fridge for 30 minutes.
- When the dough rests, add about 3-4 tablespoons of water to loosen the consistency a little.
- Heat the pan over medium heat.
- Add a little oil and wipe off the excess with a paper towel.
- Use a ladle or bowl to pour about 3 tablespoons of dough in the middle of the pan.
- Fry the pancake until the bubbles appear at the top (~1-1.5 min).
- Turn the pancake over and fry for about 30 seconds.
- After frying all the pancakes, spread half of them with bean paste or, as in my case, dulce de leche.
- Then place another dorayaki cake onto the other to make a sandwich.

150 g all purpose flour
110 g sugar
~40 ml water
2 eggs
1 tsp. baking powder
1 tbsp. honey
1 tsp. mirin (can be replaced with honey)
200 g anko paste (recipe)
or
200 g dulce de leche or nutella
