Polish Apple Pie on a Shortbread Pastry

For many, apple pie is the taste of childhood. The scent of baked apples 🥧 with a hint of cinnamon 🌿 perfectly fills long autumn evenings 🍂. It originates from the 14th century and has French roots, but in Poland, it is also known as "jabłecznik," which gained popularity in the 19th century. Quite rightly so, as in 2024, polish jablecznik was voted the best sweet cake in the world 🥇 in the Taste Atlas ranking. However, I suspect that there are as many recipes as there are people. Here, I present a classic version with a buttery shortbread pastry 🧈 and a thick layer of juicy apples 🍎.

Contemporary Neapolitan pizza (Biga)

Neapolitan pizza 🍕 is the world's most popular pizza style. Its history is over 130 years old. To this day, chefs are still outdoing themselves in creating more and more sophisticated compositions 🎨, using carefully selected ingredients 🍅🧀. Modern Neapolitan pizza is characterized by a light, long-matured dough with a large inflated crust and a high hydration level even above 70% 💧. Preferments are often used to prepare the dough. In this recipe we will use one of those, specifically bigi.

AVPN's True Neapolitan Pizza

Neapolitan is the most popular style of pizza 🍕, dating back to the 1600s. At first it was a wheat pie with lard, basil and cheese 🧀. Over time, the lard was replaced by olive oil, and the import and popularization of tomatoes 🍅 led to the creation of a pizza called margherita. It is said to have been developed in 1889 in honor of Queen Margherita's 👑 arrival in Naples. Since then, pizza has become a symbol of Italy, with the Association of Real Neapolitan Pizza (AVPN) guarding its authenticity. In this recipe, we will discuss the characteristics of this exceptional product and prepare your own pizza worthy of the Neapolitan certificate 🔥.
