Directions
Dough:
- Mix the water with salt and warm up to ~33°C (90°F).
- Sift the flour into a bowl, add the yeast, water and olive oil.
- Mix everything and knead for about 10 minutes.
- Put the dough into a bowl, sprinkle with olive oil and cover with plastic wrap. Leave in a warm place and allow to rise for 2 hours.
Sauce:
- Chop the onion and garlic into small cubes. Slightly crush or blend the tomatoes.
- Sauté the onion with oregano in olive oil. Then add tomatoes and sugar.
- Cook on a low heat for about 20 minutes (until the sauce thickens).
- Season to taste with salt and pepper.
Preparation:
- Preheat the oven to 220°C (425°F).
- Prepare standard cake sheet pan (24x36cm or 9x13") and grease with olive oil.
- Take the dough out of the bowl, sprinkle it with flour and roll out into a rectangle, then press the dough into the cake pan.
- Grate the cheese and add half to the pizza.
- Put sliced Italian sausage on top (you can also add vegetables like bell peppers or mushrooms).
- Cover the ingredients with the rest of the cheese.
- Pour the prepared tomato sauce on top, add pepperoni and sprinkle with grated parmesan cheese.
- Bake for 25-30 minutes.

500 g of wheat flour (preferably type 00)
300 ml of water
7 g of dry yeast
2 tsp. salt
2 tbsp. of olive oil
Sauce:
800 g canned tomatoes
2 cloves of garlic
1 small onion
1 tsp. of sugar
1 tsp. oregano
1 tsp. of olive oil
salt and pepper to taste
Toppings:
20 g of Italian sausage
80 g of pepperoni
400 g of mozzarella cheese
a handful of grated parmesan cheese
