Directions
Crust:
- Mix flour, sugar and salt.
- Chop the cold butter and add it to the flour.
- Using your fingers crush and coat the butter in the flour.
- Add water and knead the dough.
- Place the dough on the countertop.
- Using a roller, roll out and fold the dough in turns.
- Do not worry if the dough is loose at first.
- Once the dough is combined, roll it out to a thickness of about 0.5 cm (1/5 inch).
- Cover the dough with foil and put it in the refrigerator for the time of filling preparation.
Filling:
- Mix 3 tablespoons of butter with honey.
- Combine the rest of the butter and knead with flour, sugar, cinnamon and salt to form a crumble.
- Chop the nuts into smaller pieces.
- Wash the pears, cut them in half and remove the cores.
- Then cut them into thin strips.
Baking:
- Preheat the oven to 190°C (375°F).
- Place the dough on a baking sheet lined with baking paper.
- Cut out a circle from the dough.
- Arrange the pears from the center, leaving about 4 cm (1.5 inch) of empty rim.
- Brush the pears with half the prepared honey.
- Sprinkle crumble and nuts between the slices of pears.
- Fold the edges of the dough up and over the filling.
- Put the prepared tart into the oven for 35-45 minutes.
- After taking it out of the oven brush the tart with the rest of the honey.

3 pears
5 tbsp. melted butter
85 g honey
30 g all purpose flour
15 g sugar
15 g walnuts
1/2 tsp. salt
1/2 tsp. cinnamon
