Directions
- Wash and finely chop the thyme.
- Pour lukewarm water into a bowl and dissolve yeast and honey in it.
- Set aside for about 10 minutes to activate the yeast.
- Add salt, sesame oil and knead the dough, adding flour in small portions.
- When the dough comes together, add chopped thyme and sesame seeds.
- Knead again and set aside covered for 1 hour.
- Divide the dough into 4 pieces, flatten them slightly, wrap them in plastic wrap and leave them for 15 minutes to let the dough relax.
- Roll out each piece of dough to a thickness of about 1 mm (1/32 inch). It is best to use a pasta machine for this.
- Cut the dough into crackers of the desired size and shape.
- Put the cut crackers on a baking tray lined with baking paper.
- Place the crackers immediately into the preheated oven (190°C / 375°F). You don't want the crackers to start rising after preparation. This would change their texture to not as crispy.
- Baking should take about 13-15 minutes. Baked crackers should be golden brown. Baking time may vary depending on the thickness and size of the prepared crackers. Remember not to bake them for too long or they will become bitter.
- Store the finished crackers in tightly sealed boxes to keep them fresh as long as possible.

200 ml lukewarm water
80 g tipo 1 flour (or whole wheat flour)
270 g 00 flour (or bread flour)
10 g fresh yeast (or 3 g instant yeast)
7 g salt
20 ml sesame oil
90 g sesame seeds (preferably white and black)
0.5 tbsp. honey*
2 sprigs fresh thyme
* use a little less than a tbsp of sugar for the vegan version
