Directions
- Mix the chia seeds with milk and refrigerate for 30 minutes.
- Dissolve the jelly in 500 ml (17 fl. oz.) of boiling water and the gelatin in 120 ml (4 fl. oz.) of boiling water.
- Pour boiling water over the dates. Leave for 15 minutes and then drain off.
- Blend dates, coconut oil and cocoa together with 50 ml (1.7 fl. oz.) of water.
- Mix with the oatmeal and spread it on a 24 cm (9 inch) round mould greased with coconut oil.
- Blend the cottage cheese, sweetener and dissolved gelatin into a smooth paste.
- Add milk with chia seeds to the cottage cheese and mix thoroughly.
- Spread the cottage cheese mixture on the bottom and refrigerate for 20 minutes.
- When the mixture is set, place the fruit on it and pour over with jelly.
- Put in the fridge for at least 2 hours.

130 g oatmeal
200 g dried dates
50 ml water
2 tbsp. coconut oil
2 tsp. cocoa
Cheesecake:
500 g lean cottage cheese
200 ml milk
120 ml water
20 g chia seeds
15 g gelatine
2 tbsp. sweetener (xylitol/stevia or sugar)
Jell-O:
77 g fruit jelly powder
500 ml water
forest fruits such as blueberries and raspberries
