Directions
Guacamole:
- Dice the onions and avocado.
- Using a mortar or a bowl and fork, crush the vegetables thoroughly with half the lime juice.
- Season with salt, pepper and, if necessary, more lime juice.
Taco:
- Cut tomatoes and lettuce into small pieces.
- Chop and fry the onion in a little oil.
- Add the meat and fry until browned (~5-8 minutes).
- Add 1/2 teaspoon salt, chopped garlic, chilli pepper, oregano, cumin and chipotle pepper (or substitutes).
- Fry everything over medium heat for another 2-3 minutes.
- Try and, if necessary, season with salt and pepper.
- Place about 2 tablespoons of meat, a little salad, tomatoes and guacamole for each tortilla.
- Finally, grate a little cheese on top.
Ingredients
Guacamole:
1 ripe avocado
1 lime
3 tbsp. chopped onion
salt and pepper
Taco:
6-8 soft or hard taco shells*
300 g ground beef
1/2 onion
2 cloves of garlic
1 tsp. chilli powder
1/2 tsp. cumin
1/2 tsp. oregano
2 tomatoes
1 chipotle pepper in adobo sauce*
fresh lettuce
Monterey Jack or mozzarella cheese
pepper, salt and frying oil
*it may be replaced by other hot pepper and a little bit of smoked pepper and cayenne pepper
**be sure to use corn tortillas for the gluten-free version.
