Directions
- Preheat the oven to 180°C (350°F).
- Cut the chicken into strips.
- Peel and dice the sweet potatoes.
- Season the chicken and sweet potatoes with salt, pepper and a little bit of olive oil.
- Wrap the chicken and potatoes separately in aluminium foil and put them in the oven.
- Remove the chicken after 30 minutes and the sweet potatoes after 1 hour.
- Cut the onions and peppers into thin feathers.
- Marinate the chicken together with the onion and chilli in a 3/4 lime juice, 2 tbsp. of honey, 1 tsp. of oregano and 1 tsp. of salt. Leave for 30 minutes.
- Crush the sweet potatoes, season them with salt and leave to cool down.
- Peel the avocado, crush it with a little salt, pepper and the remaining lime juice.
- Drain the beans, chop cilantro and crumble the feta cheese.
- Arrange all the ingredients in equal quantities on the tortillas.
- Roll burritos and heat it in the oven for a few minutes before serving.

1 red onion
1 big sweet potato
1 avocado
1/2 can of red beans
1 chilli pepper
1 lime
80 g feta cheese
2 tbsp. honey
fresh cilantro
salt, pepper, oregano and olive oil
* be sure to use corn tortillas for the gluten-free version.
