Directions
- Cut the sausage into cubes or slices.
- Cut onion into half moons and chop garlic and hot pepper into small cubes.
- Cut peppers and zucchini into fairly large cubes.
- Peel and chop tomatoes.
- Heat a little lard or oil in a large pot.
- Fry onion, garlic, chilli pepper and sausage over medium heat (~5 minutes).
- Add the peppers and fry for another 5 minutes.
- Pour chopped tomatoes over everything, add zucchini, tomato paste and cook under cover for 15 minutes.
- Season to taste with sweet paprika, salt and pepper.
- Continue cooking, stirring from time to time until the vegetables are soft but not overcooked (an extra 10-15 minutes).
- At the end, season to taste if necessary and serve with toasts or bread.

1500 g red/green/yellow bell peppers (5-6 pieces)
700 g zucchini (2 small)
350 g onions (3 medium)
1000 g tomatoes
700 g dried sausage
3 cloves of garlic
2 tbsp. tomato paste
1 chilli pepper
3-4 tsp. paprika powder (preferably smoked)
oil or lard for frying
salt and pepper
