Directions
Dough:
- Mix the flour, salt and sugar. Cut the cold butter into cubes and add to the rest of the ingredients.
- Using a mixer, knead the dough until it starts to resemble crumble.
- Add cold water and knead again until the dough is smooth.
- Wrap dough in foil and put in the freezer for about 30 minutes.
Filling:
- Peel the apples and cut into thin slices.
- Mix with flour, cinnamon, sugar, lemon juice and a pinch of salt.
Preparation:
- Preheat the oven to 210°C (410°F).
- Prepare pie pan (25cm/~10 inch in diameter) and grease with butter.
- Take the dough out of the freezer, divide it in half, sprinkle with flour and roll it out to a thickness of 2mm.
- Put one part of the dough into a pan and spread the apples on it.
- Cut the second half of the dough into 2.5cm (1inch) strips.
- Place the strips on the pie to create a grid. Remember to seal the edges.
- Sprinkle the cake with a teaspoon of sugar.
- Put the pie in the oven for 15 minutes.
- After this time, reduce the temperature to 190°C (375°F), cover the pie with aluminum foil and bake for 1 hour.
- Remove the foil for the last 10 minutes of baking.

330 g cold butter
1 tsp. salt
2 tbsp. sugar
Filling:
6 medium apples
3 tbsp. all purpose flour
70 g sugar
1 tbsp. lemon juice
2 tsp. cinnamon
