Directions
- Mix water and milk with yeast, salt and sugar.
- Add flour and melted butter.
- Knead the dough for about 10 minutes.
- After this time put the dough in a bowl, cover with a damp cloth and let it rise for 1 hour.
- When risen, turn the dough out onto a work surface, dust lightly with flour and divide into 10-12 balls.
- Place the balls on a baking tray, cover with a damp cloth and let rise again for 1 hour.
- Preheat the oven to 350°F (180°C).
- Heat a heavy bottomed skillet over medium heat.
- Roast the risen buns in the pan for about 2-3 minutes on each side (until golden brown).
- Put the toasted buns straight from the pan into the oven and bake for 5 minutes.
- Repeat the process with the rest of the muffins.

15 g fresh yeast (or 7 g dry)
140 ml water
140 ml whole milk
480 g all purpose flour
30 g butter
1 tbsp. sugar
1 tsp. salt
